Ingredients
1 350 g container of Soykei extra-firm tofu
1 small red onion, cut into slices
4 hamburger buns
1 avocado cut into thin wedges
250 ml (1 cup) chopped red cabbage
1 carrot cut into thin strips
For the marinade:
125 ml (1/2 cup) bottled barbecue sauce
60 ml (1/4 cup) chicken broth
15 ml (1 tbsp) barbecue spices
10 ml (2 tsp) chopped garlic
For the mayonnaise:
125 ml (1/2 cup) mayonnaise
15 ml (1 tbsp) chopped fresh chives
10 ml (2 tsp) barbecue spices
Preparation
- Cut the tofu block into four slices. Pat the tofu slices dry with a clean cloth.
- In a large airtight bag, combine the marinade ingredients. Add the tofu slices and stir to coat them well with the marinade. Remove air from the bag and seal. Leave to marinate for 1 to 2 hours in the fridge.
- When ready to cook, preheat the barbecue to medium-high power (approximately 220°C – 425°F).
- In a bowl, mix the mayonnaise ingredients. Reserve in a cool place.
- Drain the tofu over a saucepan to collect the marinade. Bring the marinade to a boil, then simmer for 1 minute over medium heat. Remove from heat and reserve.
- On the hot, oiled barbecue grill, place a non-stick barbecue baking sheet. Grill the tofu slices and onion rings for 2 minutes on each side.
- Open the hamburger buns, then place them on the hot, oiled barbecue grill. Grill for 30 seconds on each side.
- Garnish the base of the buns with slices of tofu, then top with the reserved marinade. Add the onion slices, avocado wedges, red cabbage and carrot strips. Drizzle with mayonnaise, then cover with the top of the buns.
