Ingredients
1 block silken Soykei tofu
1 block firm Soykei tofu (pressed to remove excess water)
600 g white chocolate chips
1 tbsp coconut oil
1 tbsp vanilla
2 tbsp instant coffee (dissolved in ¼ cup hot water)
⅓ cup cocoa powder
Preparation
- In a microwave-safe bowl, combine the white chocolate and coconut oil. Heat for 1 minute 30 seconds. Continue in 30-second bursts until chocolate is melted. Set aside.
- In a blender, place the firm tofu, silken tofu, vanilla and coffee concentrate. Blend until creamy and smooth. Don’t hesitate to scrape down the sides of the blender and start blending again to make sure you don’t get any lumps of tofu in your mousse.
- Add the melted chocolate to the remaining ingredients in the blender and blend again.
- Fill your dishes (containers/ramekins) up to halfway and sprinkle with cocoa powder to completely cover the tofu mixture. Repeat this step to fill the rest of the dishes.
- Refrigerate for at least 12 hours.
