Ingredients
Marinated Tofu “Ham”:
1 454-g block of Soykei firm tofu, thinly sliced
3 tablespoons soy sauce
2 tablespoons beet juice
1 tablespoon maple syrup
1 tablespoon nutritional yeast
1 teaspoon smoked paprika
½ teaspoon garlic powder
¼ teaspoon liquid smoke
1 tablespoon olive oil (for cooking)
Sandwich:
2 ciabatta rolls, cut in half
Mag “Sandwicheria Focaccia” sauce
Tomato slices
Shredded lettuce
½ red onion, thinly sliced
Gherkins, sliced into rounds
Preparation
Tofu “Ham”
Slice the tofu as thinly as possible, ideally between 3 and 5 mm thick.
In a deep, airtight container, combine the soy sauce, beet juice, maple syrup, nutritional yeast, smoked paprika, garlic powder, and liquid smoke. Place the tofu slices in the marinade, turning them to coat each slice thoroughly. Cover and refrigerate for 2 to 8 hours.
Heat the olive oil in a skillet over medium-high heat. Lightly pat the tofu slices dry and cook them for 3 to 4 minutes on each side until they are golden brown and slightly caramelized.
Assembly
Generously spread Mag Sandwicheria Focaccia sauce on both inner sides of each ciabatta roll.
Arrange the slices of ham-flavored tofu, lettuce, tomato slices, red onion, and pickles.
Close the sandwich, press down gently, cut in half, and serve.
