Ingredients
½ block of Soykei firm tofu
2 ripe avocados, peeled and pitted
¼ cup of plain Greek yogurt
⅓ cup of fresh cilantro
Juice of 2 limes
2 garlic cloves
1 tsp of salt
Pepper to taste
1 tbsp of chopped chives (for garnish)
Pitas:
1 package of store-bought pitas
2 tbsp of olive oil
1 tsp of ground cumin
1 tsp of chili spices or smoked paprika
Pinch of salt
Vegetable Platter:
Vegetables of your choice (5-6 carrots, 1 cucumber, 1 bell pepper, 1 bunch of radishes, 2 celery stalks, 1 endive, a large handful of cherry tomatoes)
Preparation
- For the spread:
• In a food processor, add the tofu, avocados, plain Greek yogurt, fresh cilantro, lime juice, garlic cloves, salt, and pepper.
• Blend until you achieve a smooth and homogeneous consistency. Adjust seasoning to taste.
• Transfer the spread to a bowl and refrigerate until ready to serve. - For the pitas:
• Preheat the oven to 180°C (350°F).
• Cut the pitas into triangles.
• Place the pita triangles on a baking sheet.
• Brush both sides of the pitas with olive oil and sprinkle ground cumin, chili spices or smoked paprika, and a pinch of salt on top.
• Bake for about 10 minutes or until the pitas are golden and crispy. - For the vegetable platter:
• Wash and cut the vegetables into sticks or bite-sized pieces.
• Arrange the vegetables, pitas, and spread on a serving platter.
