Creamy tofu

Ingredients

½ package of Soykei silken tofu, 250 g
2 shallots, minced
¼ cup chives
2 tbsp red wine vinegar

1 tbsp Dijon mustard
1 tbsp maple syrup
½ tsp salt
¼ cup vegetable oil

Preparation

In a frying pan over low heat, add one tablespoon of oil, a pinch of salt and the shallots. Cook until the shallots are soft, about 3 minutes.

Remove from the heat and let cool in the refrigerator for 5 minutes.

Add the shallots and tofu to a blender and blend until well combined. Add the remaining ingredients, except the vegetable oil, and blend again.

Add one third of the oil to the mix and blend again. Repeat two more times with the remaining oil.

Adjust the seasoning, as needed.

Enjoy as a dip, a salad dressing or pour on top of grilled meat or fish
