Ingredients

Tofu:
1 block firm Soykei tofu
1 tbsp olive oil
Salt and pepper, to taste
2 tbsp cornstarch

Honey Garlic Sauce:
3 tbsp toasted sesame oil
3–4 garlic cloves, minced
3 tbsp honey
1 tbsp soy sauce
1 tsp rice vinegar
1 tsp cornstarch mixed with 1 tsp water

For Serving:
Cooked jasmine or basmati rice
Roasted broccoli
Roasted bok choy
Shelled edamame
Sliced green onions, to garnish

Preparation

  1. Preheat oven to 425°F. Cut Soykei tofu into cubes and gently pat dry to remove excess moisture.
  2. Toss tofu with olive oil, salt, pepper, and cornstarch until evenly coated. Arrange on a lined baking sheet and bake for 20 minutes, flipping halfway, until golden and crispy.
  3. Meanwhile, heat sesame oil in a pan over medium heat. Add garlic and sauté until fragrant. Stir in honey, soy sauce, and rice vinegar. Add the cornstarch slurry and simmer until sauce thickens.
  4. Add crispy tofu to the sauce and toss to coat evenly.
  5. Serve over rice with broccoli, bok choy, and edamame. Garnish with sliced green onions.
