Ingredients
Tofu:
1 block firm Soykei tofu
1 tbsp olive oil
Salt and pepper, to taste
2 tbsp cornstarch
Honey Garlic Sauce:
3 tbsp toasted sesame oil
3–4 garlic cloves, minced
3 tbsp honey
1 tbsp soy sauce
1 tsp rice vinegar
1 tsp cornstarch mixed with 1 tsp water
For Serving:
Cooked jasmine or basmati rice
Roasted broccoli
Roasted bok choy
Shelled edamame
Sliced green onions, to garnish
Preparation
- Preheat oven to 425°F. Cut Soykei tofu into cubes and gently pat dry to remove excess moisture.
- Toss tofu with olive oil, salt, pepper, and cornstarch until evenly coated. Arrange on a lined baking sheet and bake for 20 minutes, flipping halfway, until golden and crispy.
- Meanwhile, heat sesame oil in a pan over medium heat. Add garlic and sauté until fragrant. Stir in honey, soy sauce, and rice vinegar. Add the cornstarch slurry and simmer until sauce thickens.
- Add crispy tofu to the sauce and toss to coat evenly.
- Serve over rice with broccoli, bok choy, and edamame. Garnish with sliced green onions.
