Ingredients
¼ cup butter, cut into cubes
½ container Soykei silken tofu
6 large eggs
1 cup white flour
¼ cup milk
¼ -½ teaspoon nutmeg (optional)
Toppings of your choice (fruit, whipped cream, maple syrup, powdered sugar, Nutella, etc.).
Preparation
- Prepare your oven by placing the rack low enough so that there is enough space; the pancake mixture will rise significantly during baking (approximately 8-10 inches). Remove a rack if necessary.
- Preheat the oven to 400 degrees F.
- Place the cubes of butter in a 9 x 13 ovenproof pan and place in the oven until completely melted. Be careful not to burn the butter.
- Meanwhile, place the remaining ingredients in a high-speed blender. Blend until smooth and homogeneous (you can also use a large bowl and hand mixer for this step).
- Once the butter has melted, remove the pan from the oven and gently pour in the pancake batter. Return the pan to the oven for about 20-25 minutes.
- Remove the golden pancake from the oven once cooked. Cut into four to eight pieces and serve with your favorite topping (fruit and whipped cream, maple syrup, powdered sugar, Nutella, etc.).
