Ingredients

1 block firm Soykei tofu
1 can rinsed and drained chickpeas
Juice from 2 lemons
⅓ cup tahini
1 tbsp paprika
1 tbsp cumin

2 tsp chipotle (optional)
1-2 garlic cloves; depending on the size (start with one and taste before adding the other)
⅓ cup of water or olive oil
Salt and pepper to taste
1-2 tbsp of olive oil to drizzle on top of finished hummus

Preparation

  1. Add all the ingredients to a deep bowl, use an immersion blender to purée everything until you reach a smooth consistency. You could also use a food processor to blend the hummus. If the hummus is too thick for your taste, you can add a little water until you reach the desired consistency.
  2. Transfer in a serving bowl and lightly drizzle some olive oil on top of your hummus. Add a drizzle of olive oil and the fresh herbs and/or spices of your choice for an even more appetizing presentation.
  3. Serve with vegetables, crackers or in your favourite sandwiches and burgers.
