Ingredients
Soykei tofu taco
1 tsp garlic powder
1 tsp onion powder
1 tsp mustard powder
1 tbsp nutritional yeast
1 tbsp soya sauce
1 tbsp Worcestershire sauce (optional)
2 tbsp oil
1 can (540ml) black beans
1 pack of taco seasoning mix
1 block of firm Soykei tofu
Taco toppings suggestions
Tortilla or taco shells

Preparation
- Preheat the oven to 220C (425F).
- Cover a baking tray in parchment paper.
- Take the block of firm Soykei tofu, open it and deposit the tofu on a clean cotton cloth. Take a potato masher and ground the tofu into a hamburger-like texture (you could also crumble it by hand).
- Put all the ground tofu in the middle of the cloth, pick up in a ball and squeeze as much water out as you can over the sink.
- Put the tofu crumbs in a bowl, add the rest of the ingredients. Mix everything until well combined.
- Spread the tofu evenly in a thin layer onto the baking tray to facilitate cooking. Put in the oven for 30 minutes, giving the tofu ‘meat’ a stir every 10 minutes.
- During this time, prepare all the desired toppings.
- Remove tofu from the oven, add black beans and the taco seasoning mix. Add half a cup of water, mix well and serve in your tacos with your favourite condiments and enjoy!
