Extra firm tofu

Ingredients

1 package of drained Soykei extra-firm tofu, 350 g
¼ cup mayonnaise or vegan mayo
¼ cup red apple, finely cubed or grated
¼ cup sunflower seeds
2 tbsp nutritional yeast
1 tbsp Dijon mustard

1 tsp curry powder
1 tsp honey or maple syrup
½ tsp turmeric
½ tsp salt
1 to 2 tbsp of fresh herbs (chives, green onions or shallots)

Preparation

Press the tofu and remove the excess water

Place the tofu in a bowl and mash it with a fork to form small chunks

Add the remaining ingredients and mix well

Adjust the seasoning, as needed

Use this mixture as a base for sandwiches or use as a spread on top of crackers for a light snack.
