For the skewers
- 1 package of Soykei firm tofu, 400 g
- ¼ cup cornstarch
- 1 tsp onion powder
- 1 tsp garlic salt
- ½ tsp cayenne pepper
- ½ tsp salt
For the coconut-peanut sauce:
- 1 cup coconut milk
- 2 tbsp creamy peanut butter
- 1 tbsp soy sauce
- 1 tbsp brown sugar
- 1 tbsp fish sauce (optional)
- 1 tsp sesame oil
- 1 tsp fresh ginger, chopped
- ½ tsp salt
- The juice and zest of 1 lime
Preparation
- In a bowl, whisk together all of the ingredients for the sauce until smooth. Set aside.
- Cut the block of tofu into 8 evenly-sized sticks
- Gently press each stick of tofu between two paper towels and remove excess water. Mix the spices and cornstarch together and toss each tofu stick in the mixture until they are well coated.
- Heat 2 tablespoons of oil in a skillet over medium-high heat. Add 4 tofu sticks to the skillet at a time and cook until each side is golden and crispy.
- Repeat with the remaining 4 tofu sticks.
- Once the tofu sticks are cooked, place them on a skewer.
- Garnish with the coconut-peanut sauce, fresh coriander, sesame seeds, and enjoy.
