Ingredients

Rice:
2 cups cooked white rice, still warm
2 tbsp rice vinegar
1 tsp granulated sugar
½ tsp salt
½ sheet nori, crumbled

Tofu Filling:
1 400g block of Soykei extra-firm tofu, coarsely grated
3 tbsp mayonnaise
3 tbsp cream cheese, softened
2 tbsp soy sauce
1 ½ tbsp Sriracha sauce
2 tsp sesame oil
1 tsp smoked paprika
2 green onions, chopped

For the topping:
¼ cup mayonnaise
1 tbsp Sriracha sauce

Garnishes
:1 avocado, sliced
1 small cucumber, diced
1 sheet of nori, cut into small pieces
Sesame seeds
2 green onions, chopped

Preparation

  1. In a mixing bowl, combine the rice vinegar, sugar, and salt. Add the warm rice and mix gently.
  2. Spread the rice into a 20×20 cm (8×8 in.) square dish, pressing down lightly to form an even layer.
  3. In a bowl, combine the grated Soykei tofu with the mayonnaise, cream cheese, soy sauce, Sriracha sauce, sesame oil, smoked paprika, and green onions
  4. The mixture should be creamy and slightly spicy. Spread evenly over the rice. Mix the mayonnaise and Sriracha. Drizzle in a zigzag pattern over the top.
  5. Bake at 350°F (180°C) for 20 minutes, until the top is hot and lightly browned. Finish under the broiler for a few minutes, watching carefully.
  6. Let cool for 5 minutes. When serving, add the avocado slices, diced cucumbers, crumbled nori sheet, sesame seeds, and green onions. Serve immediately.
