Ingredients
Rice:
2 cups cooked white rice, still warm
2 tbsp rice vinegar
1 tsp granulated sugar
½ tsp salt
½ sheet nori, crumbled
Tofu Filling:
1 400g block of Soykei extra-firm tofu, coarsely grated
3 tbsp mayonnaise
3 tbsp cream cheese, softened
2 tbsp soy sauce
1 ½ tbsp Sriracha sauce
2 tsp sesame oil
1 tsp smoked paprika
2 green onions, chopped
For the topping:
¼ cup mayonnaise
1 tbsp Sriracha sauce
Garnishes
:1 avocado, sliced
1 small cucumber, diced
1 sheet of nori, cut into small pieces
Sesame seeds
2 green onions, chopped
Preparation
- In a mixing bowl, combine the rice vinegar, sugar, and salt. Add the warm rice and mix gently.
- Spread the rice into a 20×20 cm (8×8 in.) square dish, pressing down lightly to form an even layer.
- In a bowl, combine the grated Soykei tofu with the mayonnaise, cream cheese, soy sauce, Sriracha sauce, sesame oil, smoked paprika, and green onions
- The mixture should be creamy and slightly spicy. Spread evenly over the rice. Mix the mayonnaise and Sriracha. Drizzle in a zigzag pattern over the top.
- Bake at 350°F (180°C) for 20 minutes, until the top is hot and lightly browned. Finish under the broiler for a few minutes, watching carefully.
- Let cool for 5 minutes. When serving, add the avocado slices, diced cucumbers, crumbled nori sheet, sesame seeds, and green onions. Serve immediately.
